Once I ate spring rolls on a Thai restaurant with Thai dip sauce whach was prepared by mixing all these in a bowl:
1 tablespoon light soy sauce
1 tablespoon white-wine vinegar or rice vinegar
3 tablespoons mirin
1/4 teaspoon grated ginger root (optional)
