I finally came up with something to use up the wild boar I had in the freezer.
I made these Wild Boar Koftas.

Pamela, is wild boar something you can get at your market or do you know someone who hunts? I’m not familiar with the word “koftas”. What nationality is this? I think that’s couscous on the right and maybe a dill sauce on the left.

Oops! Just realized there is a link to your recipe. I see that it’s Middle Eastern. I haven’t tried that cuisine, but from what I see it all looks tasty.

Hi Irene,
I bought the boar from my local supermarket, here in Switzerland game is very popular and in the Autumn it is very readily available.
A kofta is a middle eastern dish consisting of ground meat and spices.
The sauce on the left is yogurt with corriander and chives. If you would like the recipe it is on my website http://www.posiesplace.net
Enjoy!

Uh oh, looks like Takahiro may have some competition.

Thanks, Pam. The recipe doesn’t look too difficult, but I would have a hard time finding wild boar steaks around here (Washington State, USA).
Patrick, Takahiro is the person that posts all those yummy Asian/Oriental meals, right? I love trying to figure out what each dish is.

Beautiful. I love the “sans casing” look. I’m amazed by how well they retain their shap during cooking.
